GO-TO GUACAMOLE Á LÀ INA
Guacamole is the best. Everyone knows that. So when it’s a beautiful spring day, and you happen to have 4 ripe avocados that you have to eat today or else, it’s even better.
I didn’t have a go-to guac recipe, so I went straight to my favorite: Ina Garten. Easy and quick to make, messy but made with love, I recommend this staple recipe for a guacamole lover who isn’t afraid to squish some avocados with their bare hands.
Tip: reserve a pit from an avocado and put it in the guacamole to preserve the bright green color.
Ingredients
4 ripe avocados (reserve 1 pit)
Freshy-squeezed juice of 1 lemon
8 dashes Tabasco sauce
1/2 cup red onion, minced
1-2 garlic cloves, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 medium tomato, seeded and diced
Preparation
Cut avocados in half, remove pits (reserve one) and place in large bowl
Lovingly smush the avocado up with a fork or your hands
Mix in remaining ingredients
Add additional salt and pepper to taste
Serve immediately
Pairing recommendations:
Beer: Pipeworks Kwingston’s Kitty Cat-Inã
In their words: A meow-garita inspired pale ale brewed with agave nectar, smoked wheat lime, orange zest & salt
In my words: A margarita in a beer, salted-rim included. ‘Nuff said.
