ENERGY BITES (AKA BIG J’s POWER NUGS)

These Energy Bites are chock-filled with nutritious goodness and the right amount of sweetness to trick you into thinking you’re eating a dessert. They’re quick and easy to make, and last for a week. Perfect for a fast breakfast, on-the-go snack or healthy treat after dinner.

Stick with the base recipe and add in any other healthy ingredients you have on hand (see suggestions below). Recommend keeping in fridge so they maintain their shape.

Ingredients

  • Base recipe:
    • 1 cup oatmeal
    • 1/2 cup peanut butter or almond butter
    • 1/4-1/3 cup honey
    • 1/2-1 cup coconut
       
  • Add-ons:
    • 1/2 c ground flax (or 1-2 tbsp flaxseed oil)
    • 1/4 c chia seeds
    • 1/4 dried cherries, chopped
    • 1/4 c dried goji berries, chopped
    • 1/4 c dates, chopped
    • 1/4 c walnuts, chopped
    • 2 tbsp pepitas
    • 1/2 cup mini dark chocolate chips 

Preparation 

  1. Mix all ingredients
  2. Make into 1 tbsp balls
  3. Chill for 30 minutes before serving
  4. Store in fridge to keep shape
