HEALTHY TURKEY BACON + VEG FRITTATA
Breakfast, lunch or dinner, this frittata is quick, healthy and delicious. Serve with a simple side salad with red wine vinegar and you’ve got it made.
Ingredients
7 eggs, separated
2 slices turkey bacon, cooked, chopped
1/2 cup tomato, chopped
1/4 cup red pepper, chopped
1/4 cup onion, chopped
3 tablespoons mozzarella (shredded or balls)
1-2 tablespoons parmesan (shredded or grated)
1 tablespoon parsley
1/2 tablespoon extra virgin olive oil
Salt and pepper
Preparation
Preheat oven to 350° F
Heat olive oil in small pan over medium high
Sauté onion and red pepper until onions are translucent, about 4 minutes. Season with salt and pepper
Add tomatoes, turkey bacon and parsley to veggie mixture for 1 minute, then remove from heat
In a large bowl, beat 3 whole eggs, 4 egg whites, salt and pepper until blended
Add veggie mixture to egg mixture, along with mozzarella - mix together
Pour mixture into a greased pie pan, then sprinkle with parmesan
Put in pre-heated oven, bake for 11-14 minutes or until eggs are set
Serves 3.
