DRAINING YOGURT WITH CHEESECLOTH
To drain yogurt, you’ll need a cheesecloth. Think of it almost like a gauze that’s used only with food. Its tight knit fabric is made of cotton and keeps the yogurt from seeping through as the liquid drains out.
The reason for draining yogurt is to achieve a thick and creamy texture.
To use, just line the cloth in a colander, add the yogurt on top, and put in the fridge for the night. In the morning, you’ll be amazed at how much water was released. Discard the water, reserve the yogurt.
