WATERMELON MOJITOS
It's summer, it’s hot out, and you’re thirsty. Who needs water when you can have this refreshing cocktail?
Ingredients
- 30 large fresh mint leaves, plus more for garnish
- 6 slices fresh watermelon, seedless
- 12 oz light rum, such as Bacardi
- 8 tbsp freshly squeezed lime juice (4 limes)
Preparation
If using a food processor (this option will be thicker and pulpier):
- Prepare food processor with fitted steel blade
- Remove rind from watermelon, place fruit in food processor and pulse until puréed to your desired consistency
- With your hands, coarsely tear mint leaves and place in food processor
- Add lime juice and rum, quickly pulse to mix ingredients
- Pour into a large pitcher and serve on ice with mint sprig for garnish
If using a juicer:
- Remove rind from watermelon and juice fruit on low; pour into a large pitcher
- Coarsely tear the mint leaves, then use a mortar and pestle to mash them; add to pitcher
- Add lime juice and rum, and thoroughly stir
- Serve on ice with mint sprig for garnish
Tip: use a citrus juicer for the limes
Serves 6.
